85g packet Indomie Mi Goreng noodles
Handful baby mushrooms, sliced
½ red capsicum, chopped
1 spring onion, finely chopped
2 eggs, whisked
- Cook Indomie mi goreng noodles to a pot of boiling water cook for 3 minutes. Drain and add seasoning, chili sauce and soy sauce.
- Heat seasoning oil in a pan over high heat. Add mushrooms and capsicum and cook for 3 minutes. Toss in noodles, spring onion, rocket and pour over eggs. Cook for 5 minutes over medium heat until egg is set
- Flip to brown on other side
- Serve with extra chili sauce. Top with coriander and fried onions.
