Indomie Omelette


85g packet Indomie Mi Goreng noodles
Handful baby mushrooms, sliced
½ red capsicum, chopped
Handful rocket
1 spring onion, finely chopped
2 eggs, whisked


  1. Cook Indomie mi goreng noodles to a pot of boiling water cook for 3 minutes. Drain and add seasoning, chili sauce and soy sauce.
  2. Heat seasoning oil in a pan over high heat. Add mushrooms and capsicum and cook for 3 minutes. Toss in noodles, spring onion, rocket and pour over eggs. Cook for 5 minutes over medium heat until egg is set
  3.  Flip to brown on other side
  4.  Serve with extra chili sauce. Top with coriander and fried onions.
